Quidim

Quindim is a dessert very popular in northeast Brazil.
Here we can notice the influence of portuguese gastronomy.
This dessert comes from sweets made at portuguese convents.
There was one dessert called 'brisa do lis' made with sugar,yolks and grinded almond. Quindim is similar to this dessert using coconut instead of almond.

There was one dessert called 'brisa do lis' made with sugar,yolks and grinded almond. Quindim is similar to this dessert using coconut instead of almond.
Ingredients (8 little quidim):
- 8 yolks.
- 30 grams butter.
- 200 grams sugar.
- 120 grams ground coconut.
- 120 ml coconut milk.

Method:
1- If you are using natural ground coconut, it is not necessary to do this step. In case you are using dried ground coconut , hydrate it adding some coconut milk, mix well and let stand for some minutes.
2- Add sugar, mix until there is no lump. You can use a blender.
3- Melt butter , add it to the bowl of step 2.
4- Separate yolks from whites, add them to the bowl passing them through a siver.
Then mix well.
5- Let stand for at least 20 minutes. Consistency must be like jelly.
6- Spread cooking moulds with some butter, sprinkle some sugar over the butter.
7- Field the cooking moulds with the mixture, put them in an ovenproof recipient filled with water until it reaches half of the recipient, this way you can cook them in a bain-marie.

My comments to the Recipe
I have seen some recipes where they put more quantity of sugar, but I think that the perfect quantity is the one I used, it provides a soft and tasty flavour. The colour of this dessert is also beautiful!.

Moqueca de Peixe

Moqueca is a very popular dish in Brazil, especially in Salvador de Bahía.
1- Wash fish fillets, marinate them with salt,garlic and lemon juice. Let stand for 30 minutes.
2- Pour some oil in a pan, sautée chopped onion at medium heat. (Don't use sliced onion).
3- Add fish and cook for 3 or 4 minutes.
4- Add Palm oil and the sliced onion, cook for 2 minutes.
6- Add peppers, tomatoes, coriander, chives,salt and cook for 15 more minutes.
7- Serve accompanied by white rice.

My comments to the recipe
It is a tasty dish, the mixture of coconut milk and palm oil provides an especial taste and softness.
Don't fear using palm oil, it is not bad and provides the typical taste of this dish.
If you have leftovers of the coriander or chives, you can freeze it.
Moqueca is a very popular dish in Brazil, especially in Salvador de Bahía.
The main ingredient are prawns or ,most of the times, fish (peixe in portuguese).
Other important ingredients are coconut milk and Palm oil , the mix provides a wonderful taste. There is no problem to use palm oil , the bad palm oil is the refined one, the palm oil used for cooking is not too much refined furthermore, it has some health benefits.

- 4 fish fillets.Cod or sea bass.
- 3 chopped garlic cloves.
- 3 tablespoons olive oil.
- 2 large chopped onions.
- Half a Onion cut into slices.
- 3 tablespoons Palm oil.
- 200 ml coconut milk.
- 360 ml water.
- 1 green pepper into slices.
- 1 red pepper into slices.
- 2 sliced tomatoes.
- 1/2 bunch of chopped chives.
- 1/2 bunch of chopped fresh coriander.
- Salt.
- White rice to accompany.
- Juice of one lemon.
