Massa ( Millet Gallettes)

Massa is a typical dessert in Burkina Faso , it is a simple dessert , a kind of pancake with a unique taste, made ​​from fermented millet flour and sugar to which you can add bananas or cooked rice.

Massa ( Millet Gallettes)


Ingredients:
  • 200 grams of millet flour.
  • 150 ml of water .
  • 150 grams of sugar .
  • 2 small ripe bananas.
  • peanut oil.

Method:

1-   Put the flour into a bowl and mix with water, knead a little to get a uniform dough and make a ball. Cover the bowl with a cloth and wait 24 hours to let the flour ferment.






2- After 24 hours, I could tell by the smell that it had fermented and found the dough this way:




3- Add the sugar and bananas :



4- Crush the bananas and mix well with your fingers or with a mixer if you want to go faster, I did not need more water, but if the mixture is not like the mixture of a  pancake, we pour a little more water :


The consistency should be like this or a little more liquid :


5- We put peanut oil in a pan and heat it up. With a spoon throw slowly the mass , making forms of tiny pancakes. Fry over low heat on both sides until golden brown .

Where to buy the ingredients:

Millet can be bought in Madrid at Lavapies neighborhood , there are several shops along the street Miguel Servet with African and Indian products.


peanut oil can be found in the Chinese stores of General Margallo at Tetuan metro. Be careful because there are brands that instead of pure peanut oil sell oil blend .

I bought it at General Margallo 9, Madrid .




My comments to the recipe :

It is a dessert with a different and peculiar flavour , it is tasty but we are not used to this taste, fermented millet has a special flavour that combines perfectly with banana , I would say that enhances its flavour , giving the slight feeling that this dessert has some banana liqueur ... it is the effect of fermentation.

Chicken in Peanut sauce

Peanut sauce is very famous in Burkina Faso and in all West African countries , in this case I present you a recipe of chicken in peanut sauce that is accompanied by tô , ( staple dish of Burkina Faso ) this peanut sauce gives the chicken softness and an incredible taste.

Ingredients (2-3 people):

  •   1/2 chicken in pieces .
    • 1 large onion .
    • 3 carrots .
    • half a cabbage.
    • 1 small can of peeled tomatoes ( to do), 390 grams approx.
    • 1 maggi cube .
    • 2 limes .
    • peanut oil.
    • 2 chillis ( optional).
    • 200 grams of peanut paste or butter .
    • salt.
    • pepper.

Method:



3-   Chop the chicken and season with salt and pepper.







2-   Cut the onion into strips. In a pressure cooker pour a little of peanut oil and fry the onions until lightly browned .
3-   We put the chicken in the pot and fry it both sides.
4-   Add 20 cl of water to the pot and the remaining ingredients except the cabbage , let it warm up a few minutes.



5-   Add the cabbage, close the lid of the pressure cooker , put the heat to a high level, when the steam comes out of the valve put the heat low and cook during 10 minutes.


6-   When the cabbage is cooked , add the peanut butter , stir well and cook for a quarter of an hour over low heat.

7-   Serve it accompanied by rice or .

My comments to the recipe

Peanut butter has always seemed to me heavy, but used to make peanut sauce with all the ingredients of this recipe is great, it gives softness and an excellent taste to the chicken.

Tô is a great accompaniment to this sauce , the flavours combine well .

The dish must be a little spicy to be faithful to the original taste.It is enough with pepper, but if you're brave and like spicier , you can add hot peppers .


Where to buy the ingredients

Peanut butter can be found in many places in Lavapiés, at the area of the street Miguel Servet.

It can also be found in the Chinese stores of General Margallo at Tetuan metro, where you also can find peanut oil . Be careful because there are brands that instead of pure peanut oil sell oil blend .

I bought it at General Margallo 9, Madrid .

Finally the maggi cubes , like the originals , which are those used in these countries. I bought them at Supersol , Alcalá Street, El Carmen underground.

Tô is the staple dish of Burkina Faso , Mali , Benin or Togo.
They eat  it every day accompanied by sauces, it is served in a common dish and eaten with one hand. It is made with sorghum , millet, maize or cassava flour by adding water , the same style of other basic dishes like in other African countries as the ones I presented months before: Funge (from Angola) or Bogobe (from Bostwana).
I used millet for the recipe of tô that I took from this Facebook page that has lots of information about food in this country:

Ingredients:
  • 200 grams of millet flour .
  • Juice of half a lemon or lime.
  • 850 ml of water.



Method:



1- Put the flour into a bowl and moisten with 250 ml of water, until slightly creamy.


2- In a saucepan , boil 600 ml of water and add the juice of half a lemon .

3. When the water reaches boiling point add the flour little by little in small quantities, continuously stirring , the mixture will thicken slowly , it is done when the mixture separates easily from the walls of the saucepan.

My comments to the recipe

It is simple to make , perhaps a little heavy because you have to stirr continuously to avoid it from burning , be careful when flour is hot because the bubbles make the flour splash and you can be burned , to prevent it just stirr continuosly.

Hibiscus juice (bissap juice)

The drink that I bring today is very typical in Burkina Faso.

Hibiscus juice is also very famous in other West African countries and Egypt. Hibiscus juice is made from dried hibiscus flowers, it is a tea , but we know it as a juice in these countries.
Hibiscus are known in Senegal and Guinea as bissap , in Mali , Ivory Coast and Burkina as Bilenni , as Foléré in Cameroon ,in Egypt is known as the drink of the pharaohs , also known as Abyssinia or Karkadé rose .
It is a healthy juice, has a lot of vitamin C ,  antioxidants , it is good for digestions , helps to lower blood pressure and lower cholesterol. It is also very tasty. !!

Hibiscus juice


ingredients:

• 125 grams of dried hibiscus flowers .
• 100 grams of sugar.
• 2 liters of water.
• 1 packet of sugar flavoured with vanilla.
• 1 tablespoon orange blossom water.
• 1 tablespoon of mint.
• a pinch of nutmeg.



method:

1- Wash the flowers in fresh water.

2-   Heat the water to boil , when it reaches the boiling point add the flowers and cook for 20 minutes, the water will quickly turn red .



3-   Turn off the heat and let cool , then strain the liquid and pour it in a jar where you add the remaining ingredients . Stir well and put it in the fridge for at least four hours because you need to drink it very fresh . You can serve it with ice cubes. It is super- refreshing for summer!!

Where to buy the ingredients:

Hibiscus flowers can be found in health food stores , but there they are sold cut in pieces and more expensive than if you buy them in a shop of African products . I bought them at Lavapiés:  Street Miguel Servet 5, in Madrid.
It is a bag with 125 grams of dried flowers :

Here you can see where to buy orange blossom wáter. I found Fresh mint  in a butcher shop in one of the Arab shops in the street Antonio Calvo , around the mosque of Madrid.

My comments to the recipe
I was very surprised by the taste of this juice, it is very tasty , the flowers are acid but the added sugar turns this juice into a sweet and very refreshing beverage for the summer. My juice was very concentrated , so I guess that with a lower concentration of flowers or with more water you can get also a good juice .
It is so healthy and tasty that you cannot miss it !!!
