Rosemary Lamb from New Zealand

Lamb is very common in New Zealand, They are not original from the country but they adapted to the environment very well and today they outnumber three times the humans.

Rosemary lamb is the most common way to cook the lamb at New Zealand , eaten for special occassions even Christmas or New Year's Day

Ingredients:

- 1 leg of lamb.
- 6 garlic cloves.
- 3 potatoes.
- 1 sweet potatoes.
- 2 lemons.
- dried figs.
- Chives.
- little onions.
- One piece of pumpkin .
- 100 grams of mushrooms.
- Radish.
- 1 tablespoon rosemary.
- 1 tablespoon parseley.
- Salt.
- Pepper.



Method:


1- Peel and cut all the vegetables in little pieces (Potatoes, sweet potaoes, pumpkin, mushroom, radish).





2- Peel the lamb leaving a little layer of fat.

3- Pour some oil in a oven proof dish, put all the vegetables inside.





4- Add the little onions, dried figs and chives.




5- Put the lamb leg on top of all the vegetables , cut garlic cloves in half ,make some cuts along the leg's lamb and place the garlic cloves into each cut.


6- Make the sauce with 2 lemons' juice, a tablespoon rosemary, a tablespoon pearsley, salt and pepper. Mix well and pour over the lamb.


7- Preheat the oven to 200ºC, cook at the same temperature for 1 hour and 20 minutes.
To see if the lamb is well cooked poke the meat with a knife.
Let cool for 10 minutes and serve accompanied by meant, currant jam or rosehip.

Cevapi - Kebab from Croatia

Ćevapi is one of the most famous dishes in Croatia, it is Croatia's kebab. Kebab is an Arabic word that means roasted meat.

It looks a bit different from the Turkish-origin kebab; it is a kind of sausage made with minced meat that can be beef, pork, lamb, or a mix.

It is eaten in a pita-type bread called Somun or Lepinja and accompanied by a sauce made from sour cream.

This dish is also widely consumed in other Balkan countries.

Cevapi - Kebab from Croatia

Ingredients for the Somun/lepinja (4 pita breads):

- 250 g wheat flour.
- 5 g Salt.
- 3 g dry baker's yeast.
- 155 g cold water.

Ingredients for Cevapi

- 800 g ground meat (mixturebeef and pork).
- 5 g Salt.
- 8 cloves of garlic.
- 5 g paprika.
- 1 egg.
- parsley.
- pepper.
- 1 onion.

Ingredients for the sauce

- Salt.
- Pepper.
- Chives.


Method:

11- Let's start with the bread. Put the flour, salt, and yeast in a bowl and mix well.


22- Add water and mix well, 
Sure, once the dough is compact, knead for 5 minutes.


33- Cover the bowl with cling film and let stand for one and a half hour.

This is how the dough looks after the first fermentation. It should double its size; the time it takes to ferment depends on the room temperature. Ideally, it should be at 24-25 degrees, otherwise, it might need more time to ferment.

Divide the dough into 4 equal parts, shape them into balls, and cover them again to let them ferment for another hour.

Preheat the oven to 250 degrees Celsius with the fan on.

7- Flatten each ball with your hands, and make marks on the surface with a knife to create a pattern.



8- Cook in the oven for 3 minutes until you see the bread puff up. The time depends on the oven; for me, it took 10 minutes. Keep the bread covered with a cloth while we prepare the rest.

9- Since sour cream is hard to find, I’m leaving a link to my blog where I explain how to make it: Sour Cream.
Put the sour cream in a jar and add the pepper, salt, and finely chopped chives. Stir well and keep it in the fridge.






10- Combine in a bowl the egg, pepper,paprika, salt, grated         garlic and parsley.







11- Add the meat and mix well.


12- Put some oil in your palms, take some ground meat to make sausages the size a finger. Put the sausages on a dish into the fridge until it is time to cook them.




13- Take a frying pan and fry the sausages, take the bread and cut in the middle as you see in the picture.


14- Add a few spoonfuls of the sauce, place the sausages in, and add the onion. If, like me, you find raw onion too strong, you can boil it in water for 15 minutes to reduce the acidity."

Chicken Cubes with Pears from China

 Chicken in cubes with Pears is a typical dish from Yunnan, a province in southwest China.

Legend has it that in 1657, Li Dingguo, who was named Prince of Jin for his services to the Emperor of the Ming Dynasty, fled to the city of Kunming (in Yunnan) to escape the attack of Qing troops. There, a peasant woman learned of Li Dingguo's arrival and wanted to make him a delicious dish. She killed her best chicken, diced the meat, and to enhance the flavour, she also diced some pears. The prince liked the dish so much that it became a traditional dish of the region since then.

It is a fairly simple dish to prepare, and the combination with pears and hamprovides the typical umami flavor of Asian cuisine, easily ending up in a spectacular dish.

Ingredients:

- 250 gr. chicken breast.
- 1 beaten egg.
- 30 gr. cornstarch.
- 150 gr. pears.
- 50 gr. ham.
- Chives.
- Ginger.
- A dash of sesame oil.
- Lemon.


Method:

1- Beat the egg, add cornstarch and mix well.



2- Cut the breast chicken into 1 and a half cm thick cubes, add the chicken to the bowl where you have the egg, mix well and let stand for 15 minutes.



3- Meanwhile peel and cut the pears into cubes the same size as the chicken breast, add a dash of lemon to prevent it from oxidating.




4- Put the chicken breast in a strainer, let the excess of egg pour in a dish under the strainer.



5- Take a Wok, pour some oil, fry the chicken for some minutes until you see the color begins to change, add the pear and cook for half a minute, take everything out and put it in a striner to get rid of the excess of oil.




6- Fry half of the chives and the ginger for 1 minute, add the ham and cook for 1 more minute, add the chicken and pear, mix well and cook for 1 more minute.




7- Now put on a dish, sprinkle the rest of the chives over the chicken and a dash of sesame oil.
