Lentils with bananas from Comoros

The recipe I present to you today is from Comoros, a country from Africa, this is an original way to cook the lentils, It is healthy, vegan and nutritious.

Ingredients:

- 3 green bananas.
- 300 grams lentils.
- 1 onion.
- 3 garlic cloves.
- 1 tomato.
- 1 tablespoon curry.



Method:

1- Peel and cut the bananas into slices, then cut the onion, garlic and tomato into pieces.



2- Put the ingredients in a casserole following this order: First a layer of bananas.


3- Add the lentils.


4- Add other layer of bananas, onion and garlic.


5- Add water until you just cover the ingredients.


6- Add curry and salt.



7- Cook at medium heat until bananas are soft, now add the tomato.


8- Cook at medium heat until the lentils are done. It will take between one hour - one hour and a half.
They will cook faster if you cover the casserole leaving a space to let the steam go out.

Pumpkin,coconut and lime Soup (Solomon islands)

There is not a lot of information about the gastronomy at Solomon islands, I found this recipe in this site dedicated to the soups of the world:

They use the typical ingredients of these islands; pumpkin,coconut and lime.

Pumpkin,coconut and lime Soup  (Solomon islands)



Ingredients:
  •   2 tablespoons oil.
  •   4 chalotes.
  •   2 tablespoons ground ginger.
  •   2 cloves of garlic.
  •   800 grams of pumpkin.
  •   4 cups of broth. (1 liter aprox).
  •   2 cups of water. (480 ml).
  •   3 tablespoons of ground curry.
  •   1 cup of coconut milk (240 ml).
  •    lime juice.
  •    Salt.
For Broth:
  •  Some leaves of spring onions.
  •  Some leek leaves.
  •  1 clove of garlic.
  •  1 chunk of onion.
  •  1 chunk of pepper.
  •   Salt.
  •   Parsley.
   
Method:


1-  We prepare a broth putting the ingredients in a casserole with water.  Put fire on a high heat and bring it to a boil. Once it reaches boiling point, turn fire on a low heat ,then cook for 30 minutes.



2-  Cut the chalotes in little pieces, sauté them in a casserole with oil for 3 minutes until they are golden.

3-  Add garlic cut into slices together with ginger, sauté 1 more minute.


4-  Peel and cut pumpkin into little pieces, Add it to the casserole. Add the cup of broth and cup of water.
Put on a high heat until it reaches boiling point, then turn to a low heat and cook covered for 30 minutes until pumpkin is soft.
Don't forget to add salt.



5-  Make a purée with the help of a blender.

6-  Add curry, coconut milk and lime juice.

7-  Stir well and serve with some basil on the top:

Lobster Crurry

Seafood is the star in Bahamas, the most typical is the rock lobster, a very big lobster that looks like a rock.
I was looking for lobster tails but all of them were finished because Christmas was approaching. I found a frozen lobster.



Lobster Curry


Ingredients:
  • 1 Lobster.
  • 1 onion.
  • 85 grams butter.
  • 2 grounded de curry.
  • 1 tablespoon flour.
  • 1 cup of milk.
  • Lemon juice.
  • Salt.


Method:



1-  Let the frozen lobster into the fridge for 12-14 hours.



2-  Open the bag, there will be ice in it. Take a big casserole, pour some warm water with salt in it, place lobster inside.

Cover the lobster with more water.

This must be done to avoid the claws to break.



3-  Leave lobster 1 h and a half until it has thawed.

4- Now is time to take the meat out of the lobster , you can use a big knife and a hammer to hit the knife , this way you make the enough strength to break the shell:




5- Put butter in a pan , sautée onions.

6- Add flour,curry and salt.

7- Add milk and put on a low heat until it boils, add more milk if it gets dry.


8- Add lobster and lemon juice, boil for half an hour.

9- Serve accompanied by rice.

Red snapper with Coconut Curry Sauce

Fish is a staple food in Kiribati. I wanted to make a recipe of a  kind of oceanic fish  easy to find in Madrid.
After my research I found that red snapper could be found in Kiribati as well as in Spain, so I decided to cook this fish.
It is a delicious fish that goes well with Coconut Curry Sauce, one of the most common sauce in the islands.
They serve it accompanied by Coconut Rice. Coconut rice Pacific way.

Ingredients:
        •   1 red snapper.
        •   3 lemon slices.
        •   380 - 400 ml coconut milk.
        •   1 dessert spoon of curry powder.
        •   Salt.
      Method:

      1-   Make three cuts at the back of the fish. Sprinkle a litle salt over the two sides of the fish.
      Pour a litle oil in an oven proof dish and place the snapper on it.
      Place a lemon slide into each cut at the back of the fish.



      2-   Preheat oven at 175 ºC , cook the fish during 45 minutes.



      3-   Now is time to prepare Coconut curry Sauce.
      Put the coconut milk in a saucepan with a little salt and curry powder, put at medium heat and stirr well. Once the mix is hot you have the sauce ready. It is easy!.



      4-   Serve the snapper with a Little Coconut curry sauce on top, accompanied by Coconut rice.



      My comments to the recipe


      It is easy and fast to cook, it surprises me the good taste of the fish deeped in coconut curry sauce, besides, coconut rice gives an extra delicious and soft taste to the dish.
