coconut 'breaded' fish

Nauru is a tiny country, a little island with no space to grow vegetables or have cattle ,so the meat they eat comes from a can and the vegetables are frozen. The only fresh ingredients are coconuts and fish. 

The marinated fish is breaded using coconut instead of bread. The mixture of fish and coconut is ideal. This recipe is easy and tasty.

Ingredients:

- 2 white fish steaks.
- 1 lime.
- 60 g grated coconut.
- Salt.
- Peppper.
- Flour.
- 1 egg.
- 1 tablespoon coconut oil.



Method:


1- Put the fish in a dish, sprinkle salt and pepper both sides. Besides,  sprinkle half a lime juice, let stand for 5 or 10 minutes.



2- Put flour in one dish, beaten egg in other dish and grated coconut in a third dish.
Put the fish on the flour dish ,put the flour on both sides of the fish, then put the fish on the dish with the eggs, bath the fish both sides, then put the fish in the coconut dish and put coconut on both sides of the fish.






3- Put some coconut oil in a frying pan, fry the fish on a low heat until it gets golden.

Fish Bangladesh style

Fish is a staple ingredient in Bangladesh dishes, it is because there are a lot of rivers and km of coast in this country.
I saw this recipe at this Bangladeshi blog:  http://zuranazrecipe.com/rui-mach-fulkopi/

This recipe is made with a fish called Rui or Rohu very common in Bangladesh coasts, it is difficult to find in Spain so I used hake instead given that it has a similar texture.
You must accompany this fish by rice, as in every Bangladeshi dish.

Ingredients (4 people):

-  500 grams fish (Rui or hake).

-  150 grams chopped onion.
-  2 tablespoons chopped onion.
-  1/2 garlic clove.
-  1 teaspoon ground cumin.
-  1 teaspoon ground paprika.
-  1/2 teaspoon ground turmeric.
-  1/2 teaspoon ground coriander.
-  Oil.
-  Salt.
-  200 grams basmati rice.
-  2 tomatoes cut in pieces.
-  150 grams cauliflower.
-  100 grams green beans.
-  40 grams green peas.
- 1 green chilli.




Method:

1- Wash fish , sprinkle some salt and turmeric over both sides.


2- Put some oil in a frying pan, fry the fish.



3- Salt cauliflower, green beans and peas, steam them in a pressure cooker. Put some water on the bottom of the cooker, and place the vegetables in a steel basket. 
Close the pressure cooker , put on a high heat. Once the steam starts to come out,  put on a low heat and cook for 3 minutes.



4- Put a tablespoon of oil, chopped onion,coriander and cumin in a mortar. Pound well until you obtain a paste.






5- In a frying pan with oil, sauté 150 grams of chopped onion. Add the paste of step 4 and tomato cut in pieces, add salt, mix well and cook for 3 minutes at medium heat.


6- Add to the frying pan the fish and vegetables, mix well. Cover and cook for 6 minutes at medium-lower heat.

7- Serve accompanied by basmati rice, sprinkle some ground cumin and chilli over the fish.

My comments to this Recipe

It is very easy to prepare, and the result is always good. The mixture of the spices match perfectly the fish. 
Besides, it is a healthy dish that you can consume whether you are on a diet or not.
The following day after the preparation of the dish , it is even taster.

Roasted fish with juk juk

Roasted fish is very common at Marshall islands, they are used to accompany the fish with 'juk juk'  that are glutinous rice balls wrapped in grated coconut.
These balls provide the necessary hidrates to complete the dish, it is an equivalent to our bread.
In Japan and Korea you can find some dishes accompanied by rice balls very similar to 'juk juk' , here we can see the influence of these countries into the Marshall islands gastronomy.

You can use roosterfish or sole, these kind of fishes are similar to those you can find in this islands.




Roasted fish with juk juk



Ingredients:
  • 1 roosterfish.
  • 170 grams glutinous rice.  
  • 60 grams white sugar.
  • 275 ml water.
  • Grated coconut.

Method

1- Don't forget we are using glutinous rice, you can see at the pictures the differences between normal and glutinous rice:

2-  Wash rice until you get a clean water, I had to wash it 10 times , we do this step to get rid of the starch.



3-  Pour 275 ml over the rice and let it stand for 1 hour, now the rice will absorb some water, this will make that the rice will be cooked in less time.


4-  Add sugar, stir and cook whithout a lid for 8 minutes at medium heat.

5-  Let the rice get cool, then make the rice balls with your hands , the size should be like golf balls.

6- Spread some grated coconut on a plate, roll the rice balls on the plate to wrap the balls with coconut.


8- Here you have juk juk:

9-  Now you can roast your fish. Add some salt and pepper. 
Pour some oil on an ovenproof dish.
Make 3 cuts along the surface of the fish and place it into the dish.

11-  Cook the fish in the oven for 15 - 20 minutes at 200 ºC.

12-  Cut the fish in pieces and accompany it by the juk juk.You already have this Marshall islands delicacy!.
