Cheese Bread

In Brazil this is a typical snack, it is originated  from Minas Gerais. A region where gold and gemstones were found, in despite of that, in the XVIII century there was a little quantity of flour, then cookers of this region decided to use milk,eggs and cheese to make some bread with little flour.
Now they use cassava starch, I used normal flour to do them like at ancient times.


In Brazil, 70% of cheese bread is produced in Mina Gerais.

Ingredients (for 67 little  breads):

-  500 grams grated cheese (half parmesan,half emmental).
-  500 grams cassava flour or starch.
-  250 ml milk if you use starch, 600 ml of milk if you use flour.
-  80 ml oil.
-  3 eggs.
-  Salt.


Method:

1- Grate cheese.



2- Put in a casserole some milk, salt and oil. Heat until it reaches boiling point, then turn off the heat.




3- Add some flour and mix well.
Then add eggs one after one , mix well ,first with the help of a wooden spoon , then, once it is cold, use your hands.
The consistency of the dough reminds of marzipan if you use flour or something sticky if you use starch.





4- Take some dough with your hands , make little balls.
Put the balls on an oven tray protected with some parchment paper. The balls should be like ping-pong balls size.



5- Preheat oven at 180ºC for 10 minutes.
The cook for 30 minutes at the same temperature , until balls get slightly golden.

cassava flour can be found at many shops where they sell latin american products.
I bought it in Madrid , in a shop at Hermanos Machado 24 , Metro Quintana.

Lephutsi

Lephutsi means pumpkin in Setswana , the main language in Botswana, this is a popular way to cook pumpkin in this country. It can be a sweet (when you add some sugar to it) or a side dish.

Ingredients (For 5 people):

  • Pumpkin. (600 grams).
  • Salt.
  • Water.
  • 25 grams of butter.
  • 1 tablespoon of sugar.
  • Half a cinnamon stick.


Method:


1- Peel and cut pumpkin  in little pieces.






2- Put pumpkin in a casserole , add some water until the pumpkin is covered in half. Add the cinnamon stick cut in pieces, salt and sugar.





3- Cook at medium heat for half an hour, until pumpkin is slightly soften.






4- Add butter in a frying pan , heat it until the butter is melted, then add the pumpkin. Fry until you see the pumpkin has turned a little more brown, as you see in the picture.
