Coconut flan from Costa Rica

Coconut flan is a very typical dessert in Costa Rica, it is very similar to the coconut pudding I made for Angola, the difference is that today we are using coconut milk and less quantity of grated coconut.

Coconut flan from Costa Rica

Ingredients:

- 250 grams condensed milk.
- 4 eggs.
- 80 grams grated coconut.
- 250 ml coconut milk.
- 250 ml whole milk.
- 100 grams of sugar for the caramel.


Method:

1- Put the eggs in a bowl and beat well.

 

2- Add coconut milk, whole milk, condensed milk , grated coconut and mix well.
                                  





3- Prepare the caramel by pouring the 100 grams of sugar into a saucepan and placing it over low heat. Gradually, it will start melting and browning. At that moment, you should remove it from the heat and pour it into the baking dish where you will make the flan




4- 
Pour the mixture into the mold that you have coated with caramel, put it in the microwave at maximum power for 10 minutes. I set it at 750 W power and had to cook it for 13 minutes. To make sure the flan is done, pierce it with a knife, and if it comes out clean, it's ready. It can also be made using a water bath in a regular oven at 350°C for 1 hour.



5- Let it stand overnight 
in the refrigerator, the next day unmold and serve cold. It's delicious and has a tropical flavor.

Rice with hearts of palm - Costa Rica

Rice with heart of palm is a delicious dish very typical from Costa Rica. Additionally, it's simple to cook, and heart of palm can be easily found in Spain at Mercadona.

Rice with hearts of palm - Costa Rica


Ingredients:

- 1 cup of rice.
- 2 cups of water.
- 1 cup of milk.
- 1 cup of evaporated milk or cream.
- 2 tablespoons of oil.
- 2 tablespoons of flour.
- 60 grams of butter.
- 1 onion.
- 1 garlic clove.
- 1 green pepper.
- 1 can of heart of palm.
- White pepper.
- Nutmeg.
- 1 and 1/2 cuos of mozzarella cheese for grting.
- 4 slices of mozzarella cheese.


Method:

1- Cut the onion,garlic,pepper and hearts of palm into litle pieces. Pour the oil in a casserole and fry onion,garlic and pepper until the onion gets transparent.






2- Add the rice and cook for a minute, then add 2 cups of water, put on a high heat until it boils and then put on a low heat and cook covered with a lid for 20 minutes.




3- While the rice cooks, let's do the dairy mixture. Take another casserole, put the butter and the flour, mix well (in a low heat):



4- Add a cup of evaporated milk or cream and another cup of milk, stir and cook at low heat for 5 minutes.



5- Add the heart of palm, salt, pepper and nutmeg, stir well and keep cooking for about 15 minutes.


7- Add the rice, mix well , cook for 5 more minutes and add the slices of mozarella cheese, mix well and pour everything in an oven proof dish.



8- Put some mozzarela cheese to grate on top of all the surface. After that put inside the oven to grate until you see that the cheese gets golden.



Serve hot!

Flowers from Extremadura

Flores or floretas are a very typical dessert in the Spanish regions of Castilla la Mancha and Extremadura.
It is a fried dough in the shape of a flower, done with the help of a special mold, they are usually sprinkled with sugar or bathed in honey, it depends on the area.
There is also a similar dessert in Colombia called "solteritas" and in Mexico they also make something similar.
In Extremadura, most of the recipes I have seen have been made with honey, this is the recipe I present today, you have to use a good honey and the flavor is spectacular, much better than with sugar.

Flores extremeñas

Ingredients:

- 3 eggs.
- 220 g flour.
- 300 ml whole milk.
- a tablespoon of anisseed.
- Lemon zest.
- Honey.



Method:

1- Infuse the milk with lemon zest and aniseed. To do this, pour the milk into a saucepan along with the lemonzest and aniseed, put it over medium heat until it starts to boil, and then take away from the heat and wait for it to get cold.


2- Once the milk is cold, strain the milk.


3- To make the dough, put the eggs in a bowl along with the flour and then add the milk step by step and mix well each time you add the milk. You can also add water when the milk runs out and the dough still does not have a good consistency. just as you see in the photos. Keep in mind that the dough does not contain sugar.




4- We look for a frying pan or casserole where the flower mold fits well, fill the frying pan with oil. Heat the oil.



5- We put the mold in the dough being careful to leave part of the mold outside the dough. Then put the mold in the frying pan, you will immediately see that the dough can come off the mold easily and we let the flower brown a little more.Then you take the flower out of the oil and put it to dry on an absorvent paper, put the flowers upside down so that the oil does not remain in the folds of the flower.




6- We put the honey in a casserole and turn on the heat until the honey becomes liquid, then you turn off the heat and put half of each flower in the honey, put them face down in the honey and then put them in a dish face up so that the honey stays in the folds of the flower.

Eish al saraya from Qatar (palace's bread)

 Eish al saraya is a dessert from the Middle East , made from bread and syrup with orange blossom water and rose water.

Eish al Saraya means Palace's bread, the name describes the freshness, softness and spectacular taste of this dessert. This is extra easy to prepare and there is no room for errors.

This is a typical dessert from Egypt, Lebanon or Qatar. I have seen several versions of the dessert, some of them use whipped cream for the white layer but the good version uses a unique custard cream.

Ingredients:

- 3 Slices of bread.
- 115 g sugar.
- 90 g corn startch.
- 6oo ml milk.
- 250 ml cream.
- 1 teaspoon rosewater.
- 1 teaspoon orange blossom water.
- 100 g de pistachios.

Ingredientes Syrup:

- 200 ml water.
- 200 g sugar.
- 1 teaspoon rosewater.
- 1 teaspoon orange blossom water.
- A squeeze of lemon.




Method:

1- Roast the bread slices in a pan without oil.

2- Take a casserole and put all the ingredients for the syrup inside, heat until the sugar is dissolved, then add the squeeze of lemon and let cool.


3- Put the slices of bread on the base of a cakes mould, fill also the gaps with bread pieces.

4- Pour the syrop over the bread.


5- Take othe casserole , put inside the milk, cream and sugar, heat until the sugar is well dissolved.




6 - Take a bowl and mix the corn startch with some milk, once it is well dissolved add it to the mixture of milk and sugar.


8- Put on a low heat and stirr until you see that the mixture thickens as you see in the picture.


9- Pour the cream over the bread and add some ground pistachio on top. Let get cool in the fridge at least for 2 hours. You should eat it cold.
