Coconut flan from Costa Rica

Coconut flan is a very typical dessert in Costa Rica, it is very similar to the coconut pudding I made for Angola, the difference is that today we are using coconut milk and less quantity of grated coconut.

Coconut flan from Costa Rica

Ingredients:

- 250 grams condensed milk.
- 4 eggs.
- 80 grams grated coconut.
- 250 ml coconut milk.
- 250 ml whole milk.
- 100 grams of sugar for the caramel.


Method:

1- Put the eggs in a bowl and beat well.

 

2- Add coconut milk, whole milk, condensed milk , grated coconut and mix well.
                                  





3- Prepare the caramel by pouring the 100 grams of sugar into a saucepan and placing it over low heat. Gradually, it will start melting and browning. At that moment, you should remove it from the heat and pour it into the baking dish where you will make the flan




4- 
Pour the mixture into the mold that you have coated with caramel, put it in the microwave at maximum power for 10 minutes. I set it at 750 W power and had to cook it for 13 minutes. To make sure the flan is done, pierce it with a knife, and if it comes out clean, it's ready. It can also be made using a water bath in a regular oven at 350°C for 1 hour.



5- Let it stand overnight 
in the refrigerator, the next day unmold and serve cold. It's delicious and has a tropical flavor.

Talautu - dessert from Papua New Guinea

 Talautu is a very typical dessert in Papua New Guinea. It is a completely natural dessert made from coconut and pineapple. You can add sugar if you want, but it can be eaten without it, savoring the combination of coconut, pineapple, and lemon. It is also a very easy dessert to make.

Ingredients:

- 1 Coconut.
- 1 Pinapple.
- Lemon juice.
- Sugar.


Method:

1- Grate some fresh coconut and place it in the cup where you will present the dessert.




If you want to see the best way to open a coconut, here's my video showing how I do it:

2-  Peel a pineapple and slice it. Take a slice and cut it into pieces put it together with the coconut.


3-  Add coconut milk until it covers all the ingredients.


4-  Add lemon juice and 2 table spoon of sugar to every cup.
The dessert is ready!

coconut 'breaded' fish

Nauru is a tiny country, a little island with no space to grow vegetables or have cattle ,so the meat they eat comes from a can and the vegetables are frozen. The only fresh ingredients are coconuts and fish. 

The marinated fish is breaded using coconut instead of bread. The mixture of fish and coconut is ideal. This recipe is easy and tasty.

Ingredients:

- 2 white fish steaks.
- 1 lime.
- 60 g grated coconut.
- Salt.
- Peppper.
- Flour.
- 1 egg.
- 1 tablespoon coconut oil.



Method:


1- Put the fish in a dish, sprinkle salt and pepper both sides. Besides,  sprinkle half a lime juice, let stand for 5 or 10 minutes.



2- Put flour in one dish, beaten egg in other dish and grated coconut in a third dish.
Put the fish on the flour dish ,put the flour on both sides of the fish, then put the fish on the dish with the eggs, bath the fish both sides, then put the fish in the coconut dish and put coconut on both sides of the fish.






3- Put some coconut oil in a frying pan, fry the fish on a low heat until it gets golden.

coconut, yucca and papaya Pudding

In Federated states of Micronesia there is not a culture of desserts and sweets, they use grated coconut or coconut milk together with a tuber like yuca, batata or breadfruit adding some cane sugar.
The recipe I present today is a pudding made of a mixture of coconut,yuca and papaya.

Ingredients (baking sheet 17x25 cm):

-  300 grams grated coconut.

-  600 grams of boiled yucca.
-  300 grams papaya meat.
-  180 grams brown or cane sugar.
-  2 eggs.



Method:

1- Peel and cut in pieces the yucca. Put in a casserole with some water, put on a high heat until it reaches boiling point, then cook at medium heat for 10 minutes.
The central root of the yucca can be removed before or after being cooked, after being cooked it is easier to remove.







2- Cut the papaya in pieces, put it in a bowl.



3- Add yucca, crush yucca and papaya with a fork , mix well.


4- Add grated coconut and mix well.





4- Add sugar, whisk eggs and mix well.




5- Once everything is well mixed, place in an oiled oven proof recipient.
Flatten to make the surface even.



6- Preheat oven at 200ºC, cook for 30 minutes at the same temperature ,heat over and below. 


7- Let get cold and cut into little pieces.




My Comments to the Recipe

It is very easy to prepare, it tastes a lot to coconut with little touches of papaya and yucca.
It is a healthy dessert.

Quidim

Quindim is a dessert very popular in northeast Brazil.
Here we can notice the influence of portuguese gastronomy.
This dessert comes from sweets made at portuguese convents.
There was one dessert called 'brisa do lis' made with sugar,yolks and grinded almond. Quindim is similar to this dessert using coconut instead of almond.

Ingredients (8 little quidim):

-  8 yolks.
-  30 grams butter.
-  200 grams sugar.
-  120 grams ground coconut.
-  120 ml coconut milk.


Method:

1- If you are using natural ground coconut, it is not necessary to do this step. In case you are using dried ground coconut , hydrate it adding some coconut milk, mix well and let stand for some minutes.




 2- Add sugar, mix until there is no lump. You can use a blender.





3- Melt butter , add it to the bowl of step 2.





4- Separate yolks from whites,  add them to the bowl passing them through a siver.
Then mix well.





5- Let stand for at least 20 minutes. Consistency must be like jelly.

6- Spread cooking moulds with some butter, sprinkle some sugar over the butter.



7- Field the cooking moulds with the mixture, put them in an ovenproof recipient filled with water until it reaches half of the recipient, this way you can cook them in a bain-marie. 



8- Preheat oven at 180 ºC, then cook in oven at the same temperature for 45 minutes until they are slightly golden.





9- Once they are cold, remove from their molds with the help of a knife and put them upside down on a dish.

My comments to the Recipe

I have seen some recipes where they put more quantity of sugar, but I think that the perfect quantity is the one I used, it provides a soft and tasty flavour. The colour of this dessert is also beautiful!.
