Rosemary Lamb from New Zealand

Lamb is very common in New Zealand, They are not original from the country but they adapted to the environment very well and today they outnumber three times the humans.

Rosemary lamb is the most common way to cook the lamb at New Zealand , eaten for special occassions even Christmas or New Year's Day

Ingredients:

- 1 leg of lamb.
- 6 garlic cloves.
- 3 potatoes.
- 1 sweet potatoes.
- 2 lemons.
- dried figs.
- Chives.
- little onions.
- One piece of pumpkin .
- 100 grams of mushrooms.
- Radish.
- 1 tablespoon rosemary.
- 1 tablespoon parseley.
- Salt.
- Pepper.



Method:


1- Peel and cut all the vegetables in little pieces (Potatoes, sweet potaoes, pumpkin, mushroom, radish).





2- Peel the lamb leaving a little layer of fat.

3- Pour some oil in a oven proof dish, put all the vegetables inside.





4- Add the little onions, dried figs and chives.




5- Put the lamb leg on top of all the vegetables , cut garlic cloves in half ,make some cuts along the leg's lamb and place the garlic cloves into each cut.


6- Make the sauce with 2 lemons' juice, a tablespoon rosemary, a tablespoon pearsley, salt and pepper. Mix well and pour over the lamb.


7- Preheat the oven to 200ºC, cook at the same temperature for 1 hour and 20 minutes.
To see if the lamb is well cooked poke the meat with a knife.
Let cool for 10 minutes and serve accompanied by meant, currant jam or rosehip.

Lettuce Burritos

 Eating healthy can be eating tasty and fun, this recipe is a healthy version of burritos.

Instead of corn tortilla we use lettuce filled with chicken, mushrooms, pears and cheese. This is a tasty mixture to create a nutritious dish.

Lettuce Burritos


Ingredients:

- Lettuce.
- Chicken breast.
- Mushrooms.
- 2 pears.
- Salt.
- Ground garlic.
- Parsley.
- Thyme.
- Rosemary.
- Cheese to melt.


Method:

1- Cut the chicken breast in little pieces.



2- Add salt, ground garlic, parsley, thyme, rosemary over the chicken and mix well.


3- Fry the chicken until it is half done.


4- Clean the mushrooms with a paper and cut into slices.



5- Peel and cut the pears into little pieces.


6- Add all the ingredients in the pan with the chicken, cook at low heat until all the ingredients are well done.


7- While the mixture is hot, put some of the filling on every lettuce leave.


8- Put some cheese over the filling, the cheese will melt thanks to the heat of the chicken.
Eat while it is still hot.

Veal with tamarind sauce (Antigua and Barbuda)

Veal with tamarind sauce


Ingredients:

  • 1 tablespoon olive oil.
  • 225 g chopped mushrooms.
  • 1 bunch of chopped chives.
  • 2  tablespoon of soy sauce.
  • ½ tablespoon sweet or hot paprika.
  • 2 tablespoon parsley.
  • 4 veal loin steak.
  • 1/2 teaspoon ground coriander.
  • 1/2 teaspoon ground cumin.
  • 1/8 teaspoon red pepper flakes (optional).
  • 1 chopped small onion.
  • 3 chopped garlic cloves.
  • 1 dessert spoon cornstarch.
  • 1 tablespoon tamarind concentrate.  

Method:


1.       Pour oil in a pan and sautée onions and chives for 3 minutes.


2.       Add soy sauce and paprika , cook for 5 more minutes.


3.       Add parseley and set everything apart.


4.       Mix coriander, cumin and red pepper flakes, sprinkle over the meat.


5.       Take a tablespoon of the prepared mix of mushrooms and chives , place it in the middle of one steak, roll the steak leaving mushrooms in the inner side , use sticks to close the meat rolls.


6.       Fry for 5 minutes, set apart.


7.       In a pan  Sautée onion and garlic for 5 minutes.


8.       Add tamarind and cornstarch.


9.       Cook for 2 minutes.


10.   Serve steaks covered with the sauce cooked in numbers 7,8,9.



My comments to the recipe:


I find amazing the bittersweet taste of tamarind! , tamarind and meat are a perfect match.


Where to find the ingredients:

I bought concentrate of tamarind at desi gourmet   (Ricardo Ortiz 24, Madrid).
It is very strong , you should use just a Little of the concentrate.
