Chickpeas with prawns - Recipe from Cádiz

Chickpeas with prawns is a very typical recipe from the province of Cadiz, it is very tasty.

Chickpeas with prawns - Recipe from Cádiz


Ingredients (2 people):

- 400 g chickpeas.
- 200 g prawns.
- 1 big onion.
- 1 green pepper.
- 1 tomato.
- 2 cloves of garlic.
- parsley.
- paprika.
- oil.
- salt.
- 1 carrot.
- 1 /4 dry ñora pepper.
- 2 bay leaf.
- 50 ml white wine.
- a few strands of saffron.
- 10 ml tomato sauce.


Method:

1- Soak the chickpeas the night before.

2- We cook the chickpeas in a pressure cooker with a bit of salt and water, put the lid on and first put on high heat, once the steam starts coming out, put on low heat and cook for 1 hour.

3- Place the prawns in a pot with enough water to cover them by about two fingers. Boil for a few minutes until they turn red. Save the broth. Peel the prawns once they are cooled. If you bought pre-cooked prawns, peel them and make a broth using the shells.


4- Turn the vegetables into slices.



5- Sauté the onion and garlic in a bit of oil until the onion becomes translucent.


6- Add bay leaf and ñora, sautée for one more minute.


7- Add the rest of vegetables and cook until they are soft.


8- Add the broth , get rid of the bay leaf and crush everything.



9- Add the cooked chickpeas, salt, pepper, saffron, wine, and parsley. Cook for 5 more minutes to let the alcohol from the wine evaporate.

10- Add the prawns.

Prawns soup from Cape Verde

The recipe I present today is 'Camaroes soup', a typical dish from Cape Verde, Camaroes means prawns in portuguese. There are several sizes of prawns, for this recipe you should use the big ones.

Prawns soup from Cape Verde



Ingredients:

-  300 grams of prawns.

-  1 onion.
-  2 clove of garlic.
-  1/2 ripen tomato.
-  1/2 Kg green plantain.
-  300 grams yucca or manioc.
-  500 grams of sweet potato.
-  3 or 4 tablespoon of oil.
-  3 or 4 grains Malagueta pepper.
-  Salt.


Method:

1- Wash prawns with some water, if they are not cooked, boil then with some salt, save water.

2- Peel prawns , reserve the heads and shells to add some taste to the soup.



3- Peel the yucca, boil in water until it is tender, then cut it in some pieces, get rid of the central thread.






4- Cut sweet potato into little cubes, cut plantain into slices.



5- Cut onion and garlic into slices , pour some oil in a casserole and sauté.




6- Cut tomato into litle pieces, add it to the casserole.



7- Add plantain, sweet potato, yucca, water (here you can use the water obtained when you cooked the prawns) , add salt and malagueta grains. Put it on medium heat.


8- Fry the heads and shells.


9- Put the heads and shells in a sieve on top of the casserole, pour some water and crush. This way you will obtain a juice with the taste of the prawns. 



10- Cook until all the ingredients are well done. Then add the prawns.


11- Cook 5 more minutes. And there you have the soup!.

My comments to the recipe


This soup is amazing, it has a wonderful taste. The Malagueta pepper is not spicy , it provides a curious taste to the soup similar to cardamom.



Where you can find the ingredients


Malagueta pepper is the ingredient more difficult to find. you can buy it on the internet. There are many online shops where they provide this spice.

Dja Sauce

This is a very popular Sauce in Benin, it is made with tomato's concentrate ,spices and dried prawns that provide the taste from the sea.  Benin is a big exporter of prawns, they even export to Europe.
This sauce can be used to accompany rice, Amiwo, Igname and Atassi. This is a sauce full of taste and very easy to cook.


Salsa Dja


Ingredients:
  • 100 g onions.
  • 4 tablespoons Peanut oil.
  • 600 g mature tomatos.
  • 2 dessert spoon ground dried prawns.
  • 1 dessert spoon paprika.
  • Salt.
  • Pepper.
  • 1 dessert spoon ginger.
  • 1 dessert spoon ground garlic.



Method:

1-  Pour peanut oil in a pan , sautée onion.



2-  Add diced tomatos. Put on a low heat.



3- Crush tomatos with a wooden spoon, cook until the meat is well separated from the skin. 




4- Use a food mill to obtain the meat of tomatos without the skin and seeds.



5- Grind dried prawns.






6- Put salt, ground dried prawns, pepper, paprika, ginger and garlic together with tomato meat. Cook on a low heat for 30 minutes to have a concentrated sauce.
If you are using pear tomatos you don't need so many time, 10 minutes is ok.

My comments to the recipe

This is a sauce full of taste , it is a great sauce to accompany rice and other food.
