Chickpeas with prawns - Recipe from Cádiz

Chickpeas with prawns is a very typical recipe from the province of Cadiz, it is very tasty.

Chickpeas with prawns - Recipe from Cádiz


Ingredients (2 people):

- 400 g chickpeas.
- 200 g prawns.
- 1 big onion.
- 1 green pepper.
- 1 tomato.
- 2 cloves of garlic.
- parsley.
- paprika.
- oil.
- salt.
- 1 carrot.
- 1 /4 dry ñora pepper.
- 2 bay leaf.
- 50 ml white wine.
- a few strands of saffron.
- 10 ml tomato sauce.


Method:

1- Soak the chickpeas the night before.

2- We cook the chickpeas in a pressure cooker with a bit of salt and water, put the lid on and first put on high heat, once the steam starts coming out, put on low heat and cook for 1 hour.

3- Place the prawns in a pot with enough water to cover them by about two fingers. Boil for a few minutes until they turn red. Save the broth. Peel the prawns once they are cooled. If you bought pre-cooked prawns, peel them and make a broth using the shells.


4- Turn the vegetables into slices.



5- Sauté the onion and garlic in a bit of oil until the onion becomes translucent.


6- Add bay leaf and ñora, sautée for one more minute.


7- Add the rest of vegetables and cook until they are soft.


8- Add the broth , get rid of the bay leaf and crush everything.



9- Add the cooked chickpeas, salt, pepper, saffron, wine, and parsley. Cook for 5 more minutes to let the alcohol from the wine evaporate.

10- Add the prawns.

Kerikeri - Salad from New Zealand

 Kerikeri is a salad very typical of the Maori people, the natives from New Zeland.

The main ingredients are corn and green peas. It is very healthy and easy to prepare.
¡This is a vegan dish!.



Ensalada Kerikeri de Nueva Zelanda



Ingredients (3 people):

- 150 grams corn.
- 100 grams green peas.
- 1 cucumber.
- Half an onion.
- 1 garlic clove.
- Oil.
- Vinegar.
- Salt.
- Pepper.
- Cayenne.
- Chives.




Method:

1- Cook the green peas with water and salt. If they are frozen you can cook them 10 minutes in boiling water.





2- Cut the cucumber into little cubes.




3- Cut the onion, garlic and chive in pieces.


4- Mix the corn, green peas, cucumber and chives.

5- Take a jar, put inside the onion, garlic, oil, vinegar, salt, pepper and a bit of cayenne. Close the jar and shake well.

Pour the jar content on the salad.

Kaima Bona Gatoi - Roasted vegetables from Papua New Guinea

Kaima Bona Gatoi is a vegetarian dish from Papua New Guinea, it is usually served as a side dish with fish or meat dishes.

It is very easy to prepare and it is very similar to our roasted vegetables called 'escalivada'.

Ingredients:


- 1 Zucchini 
- 1 Eggplant 
- Salt 
- 1 Red Pepper 
- 1 Onion 
- 1 teaspoon of cilantro 
- 1 teaspoon of paprika, spicy or not, as you like.
- Vinegar 
- Oil 


Preparation:

1- Cut the eggplant and zucchini into 1 or 2 centimeter thick slices. Cut the onion into 8 pieces and the pepper into small pieces.





2- Put everything in a bowl and add salt, a little bit of oil, vinegar, ginger, cilantro, and paprika. Mix well and let the vegetables marinate for 1 hour.

3- Put the vegetables in the oven and cook for 10 minutes at 200 degrees Celsius, and you're done!

Chicken Saloona from Qatar

 Saloona is a meat stew typical from Middle East, here I present to you the recipe from Qatar.

Chicken is the most popular ingredient for the Saloona, but lamb meat can also be used and there is also a vegetarian version.

It is said that the dish has a Bedouin origin. It is very often consumed in Ramadan.

Chicken Saloona


Ingredients:

- 3 cinnamon sticks.
- 4 green cardamom seeds.
- 3 dried lemons.
- 6 cloves.
- 2 onions.
- 1 teaspoon garlic.
- 1 kg chicken.
- 2 tomatos.
- 2 teaspoon ground coriander.
- 1 teaspoon turmeric.
- 3 teaspoon Arabian masala.
- Salt.
- Oil.
- 300 g potatoes.
- 300 g zuchinni.
- 2 carrots.



Method:

1- Put some oil in a casserole, add the cinnamon, cardamom, dry lemon and cloves, Heat until you smell the scent of the spices.

2- Cut the onions and sautée until it gets golden.

3- Add the garlic and the chicken (in pieces), cook for 5 or 6 minutes.

4- Cut the tomatos into pieces, add to the casserole and cook for 5 or 6 minutes with the lid on.


5- Add coriander, turmeric, salt and Arabian masala, mix well and cook for some more minutes.


6-  Cut potatoes, zuchinni and carrots into pieces, add them to the casserole , add also two glasses of water and cook for 40 minutes with the lid on.



7- To know if the potato is well done, use a knife as you see in the photo.


8- Use rice as a side dish.

Empanada from Colombia

The empanada reached Colombia with the spanish conquest, the original empanadas came from Galicia, the recipe changed in Colombia to adapt to the local ingredients.

At the beginning the empanadas were cooked in the oven, later they were fried, due to the African influence. The original empanadas were made from wheat flour, this was later changed to precooked corn flour.

The empanadas were original from Grecia and the Persian Empire, this way of cooking allowed to move the food wrapped in bread. That's the meaning of 'empanar' to wrap in bread.

This way of cooking reached Spain with the arab invasion on the VIII century.

El most typical filling is made from meat and vegetables.

Empanada from Colombia

Ingredients:

- Oil.
- 1/2 kilo shredded meat.
- 6 tomatos.
- 3 onios.
- 1/2 kilo precooked corn flour.
- 1 fresh coriander.
- Garlic.
- chili.
- 6 medium potatos.
- Cumin.
- Thyme.
- Ground garlic.
- Saffron.
- Salt.
- Water



Method:

1- Put the meat in a casserole together with some water, salt, onion, persil, leek, carrot and bay leaves.
Keep the broth, you will use it later to moisten the empanadas.


2- Peel and cut potatos into little cubes, cook them in water with salt during 12 minutes.


3- Cut onions, tomatos and garlic into little cubes.

4- Sautée onions and garlic.


5- Add the spices, the shredded meat, potatos, tomatos and cook for several minutes until all the ingredients are well cooked. Let it get cool.





6- Now it is time to make the dough. To obtain the characteristic yellow we use some threads of saffron, let it infuse in hot water during at least 10 minutes.

7- Put the flour in a bowl , add salt and the infused water. 
knead until it is homogeneous, if needed use some broth to moisten the dough.
Take some cling film, put it on a surface , moisten it with some oil.

Take a portion of dough, put it on the cling film, flatten and put some filling in the middle.

8 - Fry the empanadas in hot oil.


9 - The empanadas are accompanied by the ají, cut the tomato into little cubes, cut the onion into little pieces. Mix together with some oil, salt and chili.

Tava Elbasani (Lamb with yogurt)

Elbasani is a city placed in the center of Albania, this recipe comes from that city.

Ingredients: 4 Serves

  • 900 g de lamb in pieces.
  • 2 cups of water to boil the lamb.
  • 2  tablespoons butter.
  • 2  tablespoons flour.
  • 3     eggs.
  • 500 grams greek yogurt.
  • 1 teaspoon ground pepper.
  • Salt.
  • oil.

Method:

    1. Salt lamb to taste.
    2. Pour a little oil in a great pot. Over medium heat cook lamb both sides, the pot should not be crowded ,cook a few pieces at the same time.
    3. Then fill the pot with water and add all the roasted lamb pieces and cook over medium heat for 1 hour.
    4. Meanwhile melt butter in a pan over medium heat, add flour and stir to mix well. Once the mixture begins to turn brown , put aside and let cool.
    1. Preheat oven at 175 ºC.
    2. Beat eggs in a bowl , add yogurt, pepper and butter sauce, salt to taste.
    3. Place lamb in a baking dish. Pour the yogurt mixture over the lamb. Cook in oven for 45 minutes and serve immidiately.

My comments to the Recipe:

This is a nice way to eat lamb, it is a new flavour that makes lamb softer.
