Lettuce Burritos

 Eating healthy can be eating tasty and fun, this recipe is a healthy version of burritos.

Instead of corn tortilla we use lettuce filled with chicken, mushrooms, pears and cheese. This is a tasty mixture to create a nutritious dish.

Lettuce Burritos


Ingredients:

- Lettuce.
- Chicken breast.
- Mushrooms.
- 2 pears.
- Salt.
- Ground garlic.
- Parsley.
- Thyme.
- Rosemary.
- Cheese to melt.


Method:

1- Cut the chicken breast in little pieces.



2- Add salt, ground garlic, parsley, thyme, rosemary over the chicken and mix well.


3- Fry the chicken until it is half done.


4- Clean the mushrooms with a paper and cut into slices.



5- Peel and cut the pears into little pieces.


6- Add all the ingredients in the pan with the chicken, cook at low heat until all the ingredients are well done.


7- While the mixture is hot, put some of the filling on every lettuce leave.


8- Put some cheese over the filling, the cheese will melt thanks to the heat of the chicken.
Eat while it is still hot.

Couscouma - Comores


Couscouma or Mardouf is the typical bread from Comores, it is made from wheat flour and butter or ghee.
The recipe I present today is the traditional one adding grated cheese and chive.
This bread is eaten daily and at big feasts like weddings and during Ramadam

Ingredients:

- 500 gr wheat flour.
- 200 gr butter or ghee.
- 1 glass of water.
- Salt.
- Grated cheese.
- Chive.



Method:

1- Sieve the flour and put it in a bowl, add water and mix well, add a table spoon of melted butter and mix well, knead for 10 minutes until the dough is not sticky.



2- Divide the dough into 6 parts, shape them like little balls.
Let them stand for 10 minutes, cover the bowl.

- Take one ball of dough and use a rolling pin to flatten it.


4- Add some melted butter on the surface.


5- Add grated cheese and chopped chive.


6- Put the dough in the shape of a cilinder ,as you see in the pictures:





7 - Put the cilinder in the shape of two spirals.


8 - Add some melted butter.


9 - Put one spiral on top of the other, flatten with the help of a rolling pin.



10 - Add more melted butter on the surface.


11 - Put on a frying pan with the surface that has the butter upside down. Fry for 1 minute.



12 - Put some melted butter on the other surface and flip down, Cook until it is sligtly brown.

Grand Father's dessert

 Grand Father's dessert is an easy dessert, you do not need to cook.

It is a traditional dessert made from Burgos' fresh cheese.

This cheese is very healthy, it does not need a maturation period, because of this, it keeps a great quantity of the milk whey, rich in potassium.

It also has a good quantity of water that allows the cheese to have low caloric value.

This is healthy , easy and tasty.

Postre del Abuelo

Ingredients:

- Burgos fresh cheese.
- Honey.
- Walnuts.



Method:

1- Cut a piece of fresh Burgos' cheese, place it on a dish.
Pour some honey on the cheese, add 2 walnuts cut in little pieces.

Cheese Bread

In Brazil this is a typical snack, it is originated  from Minas Gerais. A region where gold and gemstones were found, in despite of that, in the XVIII century there was a little quantity of flour, then cookers of this region decided to use milk,eggs and cheese to make some bread with little flour.
Now they use cassava starch, I used normal flour to do them like at ancient times.


In Brazil, 70% of cheese bread is produced in Mina Gerais.

Ingredients (for 67 little  breads):

-  500 grams grated cheese (half parmesan,half emmental).
-  500 grams cassava flour or starch.
-  250 ml milk if you use starch, 600 ml of milk if you use flour.
-  80 ml oil.
-  3 eggs.
-  Salt.


Method:

1- Grate cheese.



2- Put in a casserole some milk, salt and oil. Heat until it reaches boiling point, then turn off the heat.




3- Add some flour and mix well.
Then add eggs one after one , mix well ,first with the help of a wooden spoon , then, once it is cold, use your hands.
The consistency of the dough reminds of marzipan if you use flour or something sticky if you use starch.





4- Take some dough with your hands , make little balls.
Put the balls on an oven tray protected with some parchment paper. The balls should be like ping-pong balls size.



5- Preheat oven at 180ºC for 10 minutes.
The cook for 30 minutes at the same temperature , until balls get slightly golden.

I bought it in Madrid , in a shop at Hermanos Machado 24 , Metro Quintana.

Käseschöberl Soup from Austria

Soup is the typical first course in Austria.
Together with the broth they are used to add semolina balls, meatballs, noodles or schöberl.
schöberl are very spongy, it is a mixture of flour,egg and cheese.
Käse means cheese in english.

Ingredients (For a rectangular mold 23 cm long):
  •   2 eggs.
  •   20 grams grated cheese (Parmesan or emmental).
  •   40 grams butter.
  •   40 grams flour.
  •   Pepper.
  •   Nutmeg.
  •   Salt.
   
Method:


1-  Separate white from yolk.
2- Melt butter and pour it in a bowl , beat it.


3-  Add yolks and beat well.


4-  Add grated cheese and keep on beating.


5-  Add salt, pepper, nutmeg and sifted flour ,stir well.


6-  Whisk the whites in another bowl until you obtain meringue, add salt.


7-  Add the whisked whites little by little to the bowl where you have the flour and eggs, do it very softly to keep the sponginess of the dough.



8- Grease an oven mold and sprinkle over it a little flour.



9-  Put the dough into the mold.



10-  Preheat oven at 180ºC (15 minutes).

11-  Cook in oven at 180ºC for 20 minutes, heat above and below. Cook it until it slightly gets golden.


12-  Now we cut the schöberl, the typical shape is a rhomboid.

Now you can eat them alone or into a broth as austrian people do.
